Taste Atlas has compiled a list of "86 of the world's best mushroom dishes," with Vietnamese cuisine making the cut with two traditional dishes: jellied meat and mushroom soup. The food website Taste Atlas recently published its list of the 86 best mushroom dishes in the world. The top spot goes to the famous Japanese ramen noodles, followed by Turkish kuzu şiş (a type of traditional kebab) and Thai tom yum in second and third place, respectively.
Vietnamese jellied meat ranked 44th and fish ball soup ranked 60th on the list. Taste Atlas introduces jellied meat as a traditional Vietnamese dish, especially popular in the Lunar New Year celebrations in Northern Vietnam. This dish is usually served with pickled onions and white rice.

Making jellied pork isn't overly complicated, but it's quite time-consuming. Ingredients like pork leg, pork skin, pig ears, etc., are cooked together with carrots, wood ear mushrooms, and other mushrooms, seasoned with spices like pepper and fish sauce. Once the meat is cooked, let it cool, then refrigerate for 5-6 hours until it solidifies and the broth has a jelly-like consistency.

The main ingredient in Canh bong is pork skin, which is washed with ginger and vinegar, sun-dried, and then deep-fried until crispy and bubbly. The soup is typically garnished with scallions, fish sauce, ginger, pepper, and vegetables such as cauliflower, carrots, and mushrooms. The soup is served with the pork skin floating on top.
