1. Ingredients for cooking chicken curry

Chicken: 1 (about 1.5-2kg)
Potatoes, sweet potatoes, carrots, onions: 1 each
3 lemongrass stalks
Cornstarch: 2 teaspoons
Chicken broth: 1 bowl
1 packet of curry
1 garlic bulb
2 purple onions

2. How to cook delicious chicken curry

Step 1: Prepare vegetables

Peel the shallots and garlic, wash and mince. Peel the onion and cut into wedges.

Peel the lemongrass, cut off the top and bottom, then use a pestle to crush it to create a fragrant smell. Wash and chop the chili. Peel the carrots, wash them, and cut them into bite-sized pieces.

Peel the sweet potatoes and potatoes, wash them and cut them into bite-sized pieces. Soak them in diluted salt water to reduce the starch, then remove and drain. Then, put the sweet potatoes and potatoes in a separate pan and fry them lightly until golden brown on the outside so that they won't fall apart when stewed.

Step 2: Prepare the chicken

Boil a pot of water and blanch the chicken for about 5 minutes, remove it to a basin and pluck the feathers. During the plucking process, wash the chicken with cold water several times.

Gut the chicken and remove the internal organs to prepare separately. Cut off the smelly gland on the chicken's tail. Rub a little salt and crushed ginger all over the chicken. After about 3 minutes, rinse the chicken under running water.

Next, chop the chicken into pieces about 5-6cm.

Step 3 : Marinate the chicken

Marinate the meat with 2 shallots, 1 minced garlic, 2 crushed lemongrass stalks, 1 chopped chili pepper, a little sugar, salt, pepper, 2 tablespoons cornstarch, 2 tablespoons fish sauce, 2 tablespoons sugar, 2 tablespoons seasoning powder and chicken curry packet.

Mix well to let the chicken absorb the spices and marinate for about 2-4 hours.

Step 4 : Cook chicken curry

Place the pan on the stove and add a little cooking oil to fry 1 lemongrass stalk to enhance the flavor of the dish. Next, add the marinated chicken to the pan and cook over low heat. During the cooking process, stir frequently until the chicken is firm.

Then, pour the chicken broth into the pot and simmer for about 30 minutes. When the chicken is tender, add the potatoes, sweet potatoes, and carrots to the pot and continue to simmer until the vegetables are soft, then season to taste.

Finally, add the onion wedges, cook a little more then turn off the heat.

Step 5 : Finish

Once cooked, scoop the chicken curry into a bowl or plate. Chicken curry is often eaten with white rice, bread or noodles, all of which are delicious.

You can garnish the chicken curry with some raw herbs like coriander and herbs to add flavor and color to the dish.

3. Notes when cooking chicken curry

To cook delicious chicken curry, you should choose a chicken weighing about 1.5kg or more, a little chewy because when stewed, the meat will not be mushy and will be more delicious. You should choose chickens with a small, firm body and a small, narrow breast.

Choose chickens with light yellow skin that is thin, smooth, and elastic. Check the skin of the chicken, if there are no bruises, blood clots, or other signs on the skin, it is a sign of a healthy chicken. Avoid buying chickens with gray, opaque, or unnaturally colored meat.

When cooking curry, cook over low heat and slowly to allow the chicken and vegetables to soften and the spices to infuse into the food.

A standard chicken curry will have a rich flavor, soft and delicious meat mixed with the rich flavor of potatoes and carrots. The curry sauce can be slightly thick or slightly runny.

Enjoy the dish when it is hot. You will feel the spicy, sweet and fatty taste very typical. When eating, add a plate of salt, chili and lemon to dip the chicken if you like.
