Pho is not just a dish, but also a part of Hanoi. Pho accompanies the daily life of the people, from street pho stalls to luxury restaurants, from breakfast to late night meals. Recently, Hanoi pho was recognized as a National Intangible Cultural Heritage.

Pho has become a symbol of elegance and sophistication in Hanoi's culinary culture. Each bowl of pho is a harmonious combination of flavors and colors, reflecting the meticulousness and dedication of those who make them. Each bowl of pho is a blend of clear broth, soft pho noodles, delicious beef and chicken, creating a colorful and flavorful culinary experience. This is not only visually pleasing but also a tribute to Vietnamese culinary art and culture.

At 5am, the broth pot at a pho restaurant in Phu Thuong was boiling, steaming. The owner and staff were busy setting up the stall, some were busy preparing knives and cutting boards, others were busy carrying bowls and chopsticks to prepare to serve customers.

Although not located in the center of Hanoi's Old Quarter, this pho restaurant has become a familiar place for many diners. The restaurant is often overloaded, with customers filling up the seats and lining up to order.

The restaurant sells many different dishes from rare, well-done, flank, brisket to red wine sauce, stir-fry, pho core, ribs. The price of each bowl of pho ranges from 40,000-80,000 VND, all of which are listed specifically for diners to easily choose.

According to the restaurant owner, to make the pho broth, the bones are soaked for 4-5 hours with ginger, lemon, salt, then washed and blanched with boiling water mixed with wine and ginger to remove the odor. Next, the bones are simmered for 18 hours. The broth is also added with grilled ginger, grilled onions, cardamom, cinnamon, and star anise in appropriate proportions. The restaurant owner imports the beef from a familiar facility. As for the beef ribs and beef core, she searches for them from the countryside, where delicious, high-quality Vietnamese beef is often available.

Mr. Nguyen Hoang Anh (Bac Tu Liem district) said that pho is available everywhere, but perhaps for him, Hanoi pho is the most special. "Pho is a special gift of Hanoi, not only Hanoi, but for me, Hanoi pho always stimulates my taste buds. It has become a tradition, almost every morning I am present at this pho restaurant because the taste of the meat and broth here suits my taste."

Not only local people, many people travel dozens of kilometers to enjoy the taste of Hanoi pho here.

Every night at 9pm, a chicken pho restaurant on Vo Chi Cong Street is always bustling with customers coming and going. According to the owner, the restaurant sells an average of nearly 1,000 bowls a day. The price of pho here ranges from 40,000-50,000 VND/bowl, quite filling.

Although it is just a simple restaurant with small tables and glass cabinets containing ingredients, this chicken pho restaurant has been a familiar place for many people around the area for the past 10 years.

The kitchen has two large pots of broth, always boiling and steaming. The broth at the restaurant is simmered for many hours with whole chicken bones and breasts.

Ms. Thanh Thao (Tay Ho district), a regular customer of the restaurant, shared that Hanoi has dozens, hundreds of delicious dishes, but none of them are as wonderful as pho. Pho is a blend of what is considered the most quintessential, from bones, meat, fragrant onions, spices to pho noodles made from rice grains.

“In Hanoi, you can see pho everywhere, with the bustling sound of knives and chopping boards from early morning to late at night. It can be seen that pho is so familiar that people can eat it at any time of the day, from breakfast to lunch, and then dinner,” Ms. Thao added.

Hanoi Pho has a rich, distinctive flavor of fragrant, fatty broth, combined with the flavors of spices, meat and soft pho noodles. A hot bowl of Hanoi Pho not only brings a warm feeling but also stimulates the taste buds with the harmony of each flavor. Pho is not only a traditional dish but also a source of inspiration for many unique variations, reflecting the creativity and flexibility of Vietnamese cuisine.

Previously, on August 9, Minister of Culture, Sports and Tourism (MOCST) Nguyen Van Hung issued Decision No. 2328/QD-BVHTTDL on announcing the list of national intangible cultural heritage for Hanoi pho.
