Introduction: People at Ham Tu wharf do not know when the fish steaming profession started here, it has been passed down from generation to generation. Fish are bought directly from fishing boats at sea and brought to shore with many types: mackerel, mackerel, squid, tuna... cleaned through many different stages to remove scales, intestines, sliced... The water for steaming fish is mixed with salt according to a recipe with different flavors and steaming times for each type is also different to ensure the meat is firm, intact, retains its delicious flavor after drying and can be stored for a long time.
