Braised stomach with lotus seeds
Ingredients for braised tripe with lotus seeds:
+ 1 small pig stomach
+ 1 bowl of lotus seeds
+ Chestnuts, red apples, a little goji berries, 1 slice of ginger,
+ 4 tablespoons white vinegar
+ 20g salt, 30g flour, 2 tablespoons cooking wine, 1 teaspoon pepper, 10g sesame oil, clean water.
How to make braised stomach with lotus seeds:
Step 1: Soak lotus seeds in water to bloom; Peel chestnuts, remove core and wash; Wash red apples.
Step 2: Clean the stomach. Accordingly, you peel the pig stomach from the inside out, wash it under the tap. To quickly clean the stomach, make it white and odorless, you can wash it with white vinegar. Then, add salt and flour, squeeze it and then wash it with water until clean. Flour has the ability to absorb dirt and clean very well.
After cleaning the stomach, put it in a pot of clean water, crush the ginger and add 2 tablespoons of cooking wine. Boil for 5 minutes, take out the stomach and wash it with warm water to remove dirt. Then, cut the stomach into bite-sized pieces.
Step 3: Add cold water to the pot, then pour in the stomach. Use a toothpick to poke holes in the red apple so that the sweetness in the apple can easily mix into the broth. Add a little ginger and white vinegar to remove the fishy smell, then boil over high heat, then reduce the heat and simmer for about 1 hour.
About 30 minutes before the broth turns milky white, add lotus seeds, chestnuts, and red dates. About 3 minutes before turning off the stove, add a few goji berries for decoration.
To enhance the flavor of the dish, add a little salt, pepper and finally sesame oil. Season to taste and you have made a pot of stewed stomach with lotus seeds and red apples that is rich, delicious, nutritious and warms the body during the humid season.
