There are still many explanations for the origin of Quang noodles. However, the most convincing conclusion is that Quang noodles were created along with the process of land reclamation and village establishment of the ancient Quang Nam people; the earliest was after the Southern expansion of King Le Thanh Tong in 1471 and the latest was during the period when the Nguyen lords took over Dang Trong from 1558.

The previous generations, through hard work, reform, and adaptation to the natural conditions of the new land, gradually shaped the identity and character of the Quang people. That character is uniquely expressed through Quang noodles.

The craft of making Quang noodles converges/creates a unique culinary value of Quang region. That is clearly shown in the choice of combining diverse sources of raw materials to process the noodle filling system.

Quang noodles followed the footsteps of migrants on their journey to the open South, willing to accept any ingredients on the way to absorb, transform, and create diversity and richness in culinary flavors.

This is a dish with many variations, highlighting the nature of folk culinary culture and is a rare dish that can "please" all types of guests.

Researchers believe that the nutritional system of Quang noodles originates from the very diverse ecosystem in which the Quang community has survived for generations.

Quang Nam land includes sea, coastal, plain, midland and mountainous areas. In which, river basins such as Thu Bon, Vu Gia, Truong Giang are both fertile plains and have quite diverse freshwater and brackish water ecosystems.

This is a suitable ecosystem for seafood such as fish, shrimp, crab, snails, mollusks, abundant, rich and very fresh raw materials to make noodle filling.

In the midlands and mountainous areas, chicken noodle soup and river and stream fish are especially prominent. Local chickens are raised in hilly areas, where food sources are abundant, so the chicken meat is fatty, fragrant and firm. Natural fish in upstream river and stream areas have firm, fragrant and sweet meat.

Based on the unchanging ingredient of rice noodles, Quang noodles have been transformed in the noodle filling system to create a vivid picture of Quang cuisine in an open cultural area/culture compatible, acculturated, and integrated with different cultures. Noodle filling is therefore an "open concept", creating the uniqueness and diversity, the simplicity and luxury, the sophistication and moderation, the specialness and popularity... of a bowl of Quang noodles.

Quang noodles are flexible in preparation, quick, easy to move and can be eaten all day... so many researchers believe that along with banh tet, Quang noodles are a vivid, clear flashback of the Quang people during the time of opening up the country.

According to researcher Nguyen Van Xuan: "In a bowl of Quang noodles, there is the presence of forests, seas, fields, dunes, herbs, birds, livestock, aquatic products..." Quang noodles are a clear expression of the "philosophy of migrants" in a rustic dish but contain the historical process of formation, the folk knowledge system in the processing and consumption process...

Regarding the name of Quang noodles, Associate Professor - Dr. Luu Trang - Principal of Da Nang University of Education, said that it is necessary to respect the separate way of writing the word "mì". Even though according to the current way of writing Vietnamese, the letter "y" after the consonants h, k, m is written as "i". But Quang noodles is a proper noun, so the word "mì" does not need to be "i" but "y". And for a long time, the word Quang noodles has been commonly written as "mì".

It should be added that the ingredient that makes Quang noodles is rice flour, not wheat flour, so Quang noodles are not related to wheat flour. Therefore, the long “y” noodle letter used in Quang noodles seems to have been a default for a long time.
