Ms. Thanh Dao (born in 1966, owner of Mr. Ta's Rib Porridge) said she has been selling rib porridge for over 40 years. Rib porridge has been passed down from her mother's generation. Before that, Ms. Dao's mother did not know how many years she had been selling it.

"Back then, my mother carried the porridge everywhere, and I was still young, following her around to serve customers. When my mother got old, I took over the job and also carried the porridge through the streets she used to go. When people craved porridge, they didn't know where I was. At that time, there were no telephones, so people advised me to find a permanent place to sell" - Ms. Dao confided.

"The children have grown up, some have settled abroad, but when they come back to visit Vietnam, they stop by to eat rib porridge as if reminiscing about the old restaurant. Some have become grandparents and also come here to buy for their grandchildren. I have been selling since the Ong Ta area was still sparsely populated, at that time each bowl of porridge cost only a few hundred dong" - Ms. Dao shared.

Regarding how to make a smooth pot of rib porridge, Ms. Dao said that the ribs must be selected from hot pork that has just been taken out of the oven; the rice grains must be thoroughly washed and then ground. After the ribs are cooked, take them out, add the ground rice and use your hands to beat continuously until the porridge is smooth and thick. Rib porridge can be served with minced meat, soft-boiled eggs, and century eggs.

"I fry the onions myself and make the century eggs myself. I choose the free-range eggs, not the industrial eggs. I sell what I eat. My children ate this porridge every day when they were young. I make my money from my labor. In these times of price storms, everything is going up, but I don't dare to increase the price because I'm afraid my customers will suffer," said Ms. Dao while scooping porridge.
Ms. Minh Anh (born in 1990) received 2 bowls of porridge to take away, saying: "When I was little, every afternoon my mother took me here to buy porridge for my younger siblings. My mother said that my sisters and I often ate porridge from Ms. Dao. Now I have given birth to 3 babies and all of them like to eat porridge here."
