Snake Pizza in Hong Kong

A pizza chain has teamed up with a centuries-old restaurant in Hong Kong to create a modern take on the traditional: snake pizza.

The dish is a collaboration between Pizza Hut Hong Kong and Ser Wong Fun, a local snake restaurant that has been around since 1895. The 22cm pizza has a traditional pizza crust and is topped with black truffles, dried ham and shredded snake meat. It uses abalone sauce instead of the usual tomato sauce and is available until November 22.

The new dish has attracted much attention, especially among diners in Hong Kong and southern China, who love stewed snake in winter.

According to local experience, the best time of year to eat snake meat is "when the autumn wind starts blowing", which is also when the snake is fattest and preparing to hibernate. Many Chinese diners believe that snake meat has medicinal properties, beautifies the skin, warms the body, and improves blood circulation.

"Combined with cheese, diced chicken, and snake meat, the flavor will be more intense," the pizzeria said in a statement before the dish went on sale earlier this month.

Hong Kong resident Mabel Sieh said the snake pizza was scary, but Rachael Wong, another resident, said she was excited about it. "Snake meat is like chicken, tastes like fish and other seafood, it is a good protein food for winter," Wong said.

This isn’t the first time Pizza Hut has come up with unusual dishes. Previously, the Taiwanese branch of the pizza chain introduced pizzas made from durian and pig’s blood, and pizzas topped with tonkatsu ramen (ramen noodles served with fried meat) in Japan.
