The world's most expensive ice cream costs nearly $6,300

Japan's Byakuya or "white night" costs 873,000 yen and becomes the world's most expensive ice cream, according to Guinness World Records.

Byakuya ice cream contains Italian white truffles, a famously expensive mushroom that costs up to 2 million yen (US$14,500) per kilogram. Other ingredients include gold leaf, two types of expensive cheese, and sakekasu (a paste-like substance formed during the sake brewing process). A serving costs 873,400 yen (US$6,270). Guinness World Records recognized Byakuya as the "world's most expensive ice cream" on May 18.

In Japanese, Byakuya means white night. A representative of Cellato, the company that produces and distributes Byakuya, said it took more than a year and a half to develop and test the unique flavor of this dish. They call Byakuya Gelato (ice cream in Italian) on their website. Those who have tried it say the ice cream has a "rich flavor."

The ice cream company says its mission is not just to create expensive desserts but also to create a "culinary adventure" by combining European ingredients with Japanese traditions. Chef Tadayoshi Yamada of the famous restaurant RiVi (based in Osaka) was invited to lead the ice cream project.

The ice cream is sold in Japan and shipped directly to customers. The company suggests thawing Byakuya at room temperature or microwaving it at 500 watts for 10-20 seconds if it feels too hard. For a more delicious treat, customers should pair it with sake or French white wine.
