Tofu – Easy-to-cook, healthy "plant meat"
Tofu (also known as bean curd, condensed bean curd) is one of the traditional foods of Asian people, known as "vegetable meat" thanks to its high protein content and superior nutritional quality. Made from fresh soy milk combined with coagulants, tofu can be produced all year round, regardless of the season and is extremely diverse in processing methods.
Currently, there are 3 main types of tofu popular on the market:
Firm tofu, old tofu: Has low water content (about 85%), making it firm, chewy and easy to fry. Rich and fatty taste. Suitable for fried and stir-fried dishes.
Soft tofu, young beans: High water content (about 90%), soft, smooth, sweet aftertaste and fragrant bean flavor. Suitable for soup, steamed dishes or hot pot.
Silken tofu: Also known as Japanese tofu, made with modern coagulant (gluconolactone), soft and smooth like cream, usually sealed in cans, can be preserved for a long time. Suitable for desserts or light soups.
When choosing tofu, pay attention to its elasticity, smooth cut, not crumbly, no strange smell and not slimy surface. Good tofu usually has a light soy aroma and a natural ivory color.
Ingredients (serves 2–3 people):
- Firm tofu: 400g
- Wheat flour or dry fried flour: 60g
- Chopped green onions: 1-2 stalks
- Cooking oil: 40ml, soy sauce: 1 tablespoon
- Salt, sugar: a little of each
- Roasted white sesame: a small pinch
Processing:
Step 1: Prepare tofu
Wash the beans gently, pat dry with paper towels, and cut into 1cm thick square slices. Do not slice too thin because they will break easily and dry out when fried.
Roll each piece of tofu in a thin layer of flour, coating all sides. This will help the tofu become crispier and hold its shape when fried.
Heat oil in a pan, then add the tofu and fry over medium heat. Turn both sides until golden brown and lightly crispy. Remove to paper towels to drain.
Mix soy sauce, salt, and a little sugar together to make a tasty sauce.
Arrange the beans on a plate, sprinkle with chopped green onions and toasted sesame seeds. Heat the oil again (very hot), then pour directly over the beans and onions – the fragrant sizzling sound will awaken all the senses!
