"To make this dish, the cook must choose delicious catfish. In particular, some places even use rare Anh Vu fish meat to make fish cakes," Taste Atlas describes.
Accordingly, after being cleaned, the fish is filtered to get the meat on both sides and marinated with a mixture of spices including galangal, fermented rice, shrimp paste, turmeric, pepper, etc. After a few hours, the fish meat is clamped onto bamboo sticks and grilled over charcoal.
When eating, fish cakes are served on a pan right at the table, with a variety of side dishes such as vermicelli, herbs, Vietnamese basil, green onions, roasted peanuts,... and dipped in shrimp paste.
